Last Night's Dinner #128: My favorite Tuna Pasta

I've made this a dozen of times but it seriously is one of my favorite quick pasta dishes to make...
You really just need a red onion, one tomato, one garlic clove, can of tuna (in olive oil) and penne pasta. You can also make this with Puttanesca sauce as seen here.

Start boiling water for pasta - should take 9 to 12 minutes to cook. In the meantime...


Sauté onions, garlic and tomato in a little bit olive oil. Add a pinch of crushed pepper flakes for zing. Cook until tomatoes start to break down. Then add tuna and oil. Try to keep the pieces fairly big. Season with salt and pepper.


You don't need to add caperberries (I just happen to have them), but I do think adding something tangy really makes this dish even better - black olives, capers, even squeezing a bit of lemon juice would work!


Drizzle more olive oil before serving - perfect with a piece of ciabatta. One day, I'm gonna have to try this recipe with fresh tuna.

Last Night's Dinner #127: Mushroom & Poached Quail Eggs Tagliatelle

I had this idea while walking around the market last Saturday. I've never cooked with Quail eggs before so I wanted to give it a try.

I need to work on my poaching skills.

Believe it or not, one of the hardest parts was actually cracking the egg shell without breaking the tiny yolk. The shell is much softer than chicken egg shell so it wasn't easy to get a clean break!

I bought a handful of random mushrooms and sauteed in butter, I didn't have any fresh herbs on hand but maybe sage would've been nice here (I just sprinkled some oregano)! Don't season too early or you'll mushrooms will get too watery. Salt draws out the moisture.

Then I just mixed in the pasta with the mushrooms and added a tad more butter ;)


I need to work on finessing this one but I think it's a good start.

Thought Monsters

Do you ever feel like there's a million things on your TO DO list but you become so consumed with the thought of having a trillion things on your list that you find yourself paralyzed and end up just stressing out about it instead of tackling one thing at a time?

I know, start a list! And that's the thing - I AM an extreme list maker, I live on Post ITs. I have random yellow notes tacked on to every surface, yet I find myself mentally unorganized and can't even get myself to sit and write out a proper to do list. You know what happens? I sit myself down eager to begin organizing but then another thought comes racing into my head and I end up losing track of what I was just thinking.

I think my mind is tired. Sore like hamstrings that have been put through a ton of deadlifts! Picture little thought-monsters running around, sticking out their tongues with tiny little hands and fingers waving by their ears as soon as I wake up and don't let up until I close my eyes for bed! That's sort of how it feels :)

So I ask... if you know exactly what I'm talking about (and I mean REALLY know what I'm talking about, like have actually experienced the thought-monsters first-hand. None of that Stephen Covey stuff! How did you exterminate them out of your head? Meditation? A new planner? A shot of something really really strong?

Last Night's Dinner #126: Farm Fresh Salad

Two things that I haven't been able to resist at the farmers market these days...


Scrumptiously sweet tomatoes and handmade cheese (in this case Mozzarella, but I usually buy Ricotta). I guess the nice thing about "cooking" with great ingredients is that there's really no need to do too much. Just slice, cut, season with salt & pepper and drizzle some oil/lemon or vinegar and that's it.

Weekend Eats

We had dinner at Hillsy's new favorite local restaurant last night - Panificio on Avenue B and 11th Street.

Overall it was a great place. Loved the calamari (it had yummy bits of fried Parsley), my entree was ok. I've never ordered Carbonara before in a restaurant before, I've always made it myself. I think I prefer thinner sliced bacon and actually seeing the egg yolk - but that's just me. The dessert made up for it - it was the best cheesecake that I've had in a LONG time. I'm not a cheesecake person, but I'd have to say that this was pretty damn good and worth going back for! Ladies? Dinner at Panificio next week?

Last Night's Dinner #126: Swiss Chard


I was walking around the farmer's market on Sunday and spotted bunches of swiss chard. I've never cooked with swiss chard before so I grabbed a bunch and figured I can easily find a couple of recipes online.

Well, I completely forgot about them and spotted them in the bottom of the fridge looking very lonely and a little on the limp side. I wasn't sure if the limp-factor made them inedible, but I wasn't about to throw them out without first giving it a try. So I did some research and found this simple recipe from elise.com. It's pretty similar to the way I like to cook broccoli rabe. Actually minus the butter, it's actually exactly the same.


Would it have been better if my chards were super fresh and not so limp? Probably, but it was definitely edible! For those of you not familiar with this leafy green... it has a little bit of a bitter after taste, but nothing too crazy. It's sort of like spinach but a little more leafy/thicker and substantial. Not too far from broccoli rabe, but not as green and it has a little bit more of a water-crunch to it!

Last Night's Dinner #125: Openface Stuffed Eggplants


I love eggplant, I think I've mentioned that they make my mouth itchy but I don't care - I love them anyway.

I was gonna simply roast them in the oven and sprinkle some crushed red pepper infused olive oil on top but I also had some ground beef defrosting so I figured why don't I just try making my version of a Filipino dish that I haven't had in a long time.


You'll need:
1 onion chopped
1 small potato chopped
2 cloves of garlic crushed
1 riped tomato chopped
a small kiddie-box of raisins (optional, but I wouldn't have this any other way)
1 lb of ground beef
salt, pepper, smoked paprika, and olive oil
2 smallish whole eggplants

step 1. Roast eggplant. You can wrap each one in foil and stick it in the oven (350-400 F) and cook until tender. For some reason this was taking forever today so I opted for the stove-top roasting. So I had them in the oven for about 35 minutes and other than the skin browning, I wasn't seeing much action so I gave this a try...

I roasted them for about 10-15 minutes, turning as often as possible. It's ok to burn the skin, actually you should fully char the skin. You don't want the flame to be too high, because you want to get the meat tender and if you're flame is too high then the outside will burn too much before the inside fully cooks through. Got it?

Set aside and allow to cool off.

step 2. In the meantime, cover the bottom of your pan with olive oil and add garlic, onions and potatoes. Season with salt. Cook until slightly golden (you may need to add some more olive oil) then add tomatoes.

Cook until tomatoes start to fall apart and then add meat.

Chop up into small pieces with your cooking utensil. Season some more. Add two pinches of smoked paprika.

Cook until the excess liquid evaporates then add raisins and mix for 30 seconds and remove from heat. If you don't like raisins, try adding dried apricots. I think it really needs the sweetness factor - leave out at your own risk :)

Cut the eggplants in half and using a teaspoon, try to scoop out/loosen up as much of the eggplant meat as possible. You don't have to transfer out the meat, just loosen it up. Now scoop in some of the meat mixture on top of the eggplant. Drizzle some olive oil on top and you're done.

You can serve this with a nice crispy refreshing iceberg lettuce salad with some yogurt-based dressing (try greek-style yogurt + fresh lemon juice + garlic + fresh mint). YUMM.

Mission Accomplished


So the stakeout went well. Instead of renting a car, Hillsy convinced me that going on foot would be 10x better. It was, but after walking a total of 5 miles, my feet were ready to kill him for his brilliant idea.

We had narrowed it down to two houses so we walked to each one from the train station and got a really good feel of the neighborhood, block and the neighbors. Yes, we rang doorbells. We spoke to a couple of neighbors which was REALLY helpful. It was so funny, there was this one lady who almost refused to open her door. We were talking to her through the little square glass for about 5 minutes until she finally figured out that weren't Bonnie & Clyde or trying to sell her a fruit dehydrating machine.


It was a successful night, as suspected, we didn't get mugged :) nor did we see any Soprano-esque activities happening on our block. Two teenage star-crossed lovers canoodling in the corner was the most action we saw that night. At the end of the night we knew which house won our hearts. We made an initial offer on Sunday night and the sellers have countered it. We put in our final offer last night, so we'll see how it goes. Hillsy has nicknamed me the "Fussline Ne-go-tia-tor" (sing to Priceline jingle).

Singing in the Rain


Despite the rain, I had such a great time at the Regina Spektor concert on Friday night!!!

She has an amazing voice, sounds exactly like she does on her album (you know how sometimes you see someone live and you're like oooh what happened??).

It was really pouring down.

I also realized that I was getting really old and boring - I was the only in the group who didn't think of smuggling in tiny bottles of liquor!! I must've missed that memo.

New Job New Threads

Drive-by Stake Out?

As usual I had such a great time with the girls last night and of course our special guest Reggie. I love having dinner with my girlfriends because not only do we get to catch up and laugh all night but they're such a great sounding board.

As you know, we've been seriously house hunting. We were actually thinking of making an offer by the end of the week but after seeing the girls last night - it's going to have to wait a couple more days. Why? Apparently we should be doing a late night drive by around the house and its surrounding areas!!?? Homeowners out there - did you stake out your neighborhood late at night prior to making an offer?? We don't have a car, so we're planning to rent one. I know it's sounds a little over the top, but I guess it can't hurt. Right? What do you guys think??

I also brought up blogging (Heart Handmade specifically) and the girls put a lot of things in perspective and our talk last night gave me the little kick in the butt that I needed. Thanks ladies and (gent)!!

100% Fat


OK, so you know how we've been on this whole no-preservative local food kick?

Well, for the past month and half I've
- gone from drinking soy milk to 100% fat un-homogenized milk
- I now use half & half or cream for my coffee (not so local there)
- Splenda to regular sugar
- I put loads of sweet cream unsalted butter on fresh baked bread - almost 5x a week

... and I haven't gained an ounce!! Plus I haven't changed my exercise routine. Things that definitely make you go hmmm hmmm or simply wtf??.

To Do List

1. Go to the gym
2. Work on at least 2 of next week's Heart Handmade posts (these take forever!)
3. Work on Business Plan (yuck!)
4. Follow-up on a ton of HH emails
5. Set up dinner for mr hillsy (he's having Adobo tonight!) and then off to have dinner with girlfriends (yay)
6. Project Runway
7. Decide whether or not we're going to make an offer on a house :0

Last Night's Dinner #125: Sundried Tomatoes & Sausage

This was a last minute no food in the fridge what do I do meal...


Luckily I had a couple of sweet Italian sausages in the freezer, half a jar of Trader Joe's Sundried Tomatoes in Olive Oil, a package of Penne pasta, milk and fresh basil from the Aero Garden.

I first removed the meat from its casings then browned the meat, added sundried tomatoes and seasoned with salt & pepper. Don't add so much of the oil - it gets a bit too greasy and I had to spoon some out.

Then I added some milk to make it a little creamier and finally added some roughly torn basil leaves. Not bad!

The Hunt Continues

It was round three of house hunting this weekend...

Too much to think about right now and I think we're both feeling a bit tired (mentally) from this whole process. From budgeting spreadsheets to worrying about moving costs to termites blah blah blah. If anyone has any furniture they want to get rid of... let me know!

Hilly starts his new job today and he looks pretty spiffy. We went back to work shopping for him on Friday at H&M... fun for me, him - not so much. Kind of sucks, coz the poor guy wore t-shirts, Golas and jeans everyday at the old job and now he's wearing proper trousers and a button down shirt. He's still not sure if they're allowed to wear jeans - so better safe than sorry. I'm so excited for him, as usual I'm sure he's going to kick some butt!!

As for me, summer is coming to a close and it's time to start thinking about next steps...

Coldspring NY


Our neighborhood hunt continues...


We took a trip out to Coldspring, NY - about an hour train ride (Metro North) north of New York City. A nice view of the Hudson...


It's a small village of 3000 people, tons of antique shops and very cute houses.


It seemed like a nice enough quiet village, but for the house prices we weren't really sure it was worth the commute.


I bought these two books from one of the antique shops - I thought that they would make a great addition to the shop (one that I will own one day).

House Hunting

Oh my god... am I really ready to leave my shoebox in the city for this....

We went on our first house hunting trip yesterday and it was a pretty successful one, minus the part where I get stung by an unknown mosquito-esque bastard and my middle finger swells up into what feels like a pregnant woman's ankles - so swollen that I can't even bend it :) SWEET. And yes, that's a bubble you see there.


The realtor showed us around 7 properties, which took approximately three hours. I suggest limiting it to 5 a day - after five they all turn into one big blur.

So are we finally ready to move out of the city?
