Mundane Mondays

We started shopping at COSTCO not too long ago and the inner nerd in me really enjoys buying six pounds of minced beef and divvying it up into smaller batches. Now I know some of you are probably cringing, I wasn't much of a freezer kinda gal either, but having a baby has put lots of things into perspective.

So you'll usually find me prepping my meats and dinner for the week on Monday afternoons (when Emma goes down for her afternoon nap). How 1950s of me! I've been reunited with an old fave and have been whipping up double batches of meatballs, again freezing them into small batches, giving me a few quick and easy dinner options for the week. I'm sure I'll eventually grow tired of these but for now it works! I also use this time to make breadcrumbs out of any leftover bread laying about (a key ingredient for the meatballs). Now I'm sure if I calculated the amount of time it takes to get the food processor out, plus the time it takes to clean it all up, plus the mental effort of it all - the gross savings here are probably not that high right? But for some reason it makes me feel good, kinda balances out the guilt I feel from tossing out perfectly edible leftovers or rotted veggies and fruits in the fridge (as for the ziplock bags, well let's not talk about those). My in-laws actually inspired our new appreciation for waste not, want not . Obviously, I can't claim to be guilt-free in this department but we're definitely more mindful when it comes to wasting food and finding savings where we can since their last visit.

that's quite admirable! and by the way, that's what costco is for! buy bulk and stock up!
