So here's what you can make with the leftover risotto! The best part, the cheesy middle!! Roll leftover risotto into balls (a little smaller than a tennis ball), insert a cube of mozzarella cheese, then flatten into patties (make sure cheese is covered), dredge in flour, stick in the fridge for 15 mins, then re-dredge in flour and fry it up. Served with arugula and oven roasted grape tomatoes with thyme!
