Be back in two weeks..


Who knew this was coming...

I'm officially taking a moving break starting today. My apartment is in shambles, I will not be using the kitchen since pots/pans and dishes will soon be in boxes and I'm sure you don't want a minute by minute broadcast of packing complaints. So, I'm leaving you for a couple of weeks. A deadly move in blogland - leaving your blog unattended for weeks, but unfortunately it is what it is. Someone just gave me the following advice this morning...

"There are going to be times where you have to do 10 things, but you can only just get 5 done --- you need to mentally accept that and then figure out what the 5 most important things to do..."

... and I've decided to take it. So hopefully you guys will stick around and I'll see you in a couple of weeks and hopefully I'll be reporting from my brand new home :)

Yay for Hump Day but I don't see the light

Hey gang! I realize that it's been ghost town-ish around here lately but life-stress has reached its peak this month and I have a feeling it's going to get a little worse before it gets any better.

Moving is no easy feat. Boxes, packing, transferring car deeds, coordinating utilities so that I will have internet connection Day 1 is harder than it seems. If all goes according to plan, we will be moving next week (yikes!)

On the good news front - my other blog Heart Handmade has gained some traction and it really makes me SO happy to see something I just started on a whim this past March evolve in the way that this has. I just started offering "site-supported by" ad space this month and I'm really overwhelmed by the kindness of the handmade community and their willingness to support my little venture. So I guess this message is for other bloggers - a very smart and talented lady once told me that when I get frustrated about blogging and get down in the dumps about the # of site visits I have, I just need to remember that each one of those numbers represent an actual person. And the fact that they chose to make my blog a part of their day is amazing. I'm also currently working on an exciting little project, that sort of involves this site - more news on that later!

I Really Really Hate Baking

I attempted to make Lemon Glazed Cake on Sunday...

Creamed butter + sugar, then added eggs

mixing dry and wet ingredients

In the oven. In the meantime, time to make the glaze...

and of course...

It was gross and inedible. Honestly, I'm not sure where I'm going wrong. I followed the recipe, measured my ingredients, but it still tasted like raw flour. Any ideas?

I think this makes it 0 for 2.

Target in the city?

I think this man was as confused as I was...




Yes, it's true. Target was in the city this weekend. Not really sure how long this outpost will be on 14th street/Broadway. Offering a small stock of their most "city-friendly" lines: Sigerson Morrison for Target, Shabby Chic, Jemma Kidd and Pixi make-up lines!

It was a little too nuts in there for me to truly enjoy. I'm going to stop by today after the gym to see if it's still there.

Bullseye Bodega. Love it. Great Marketing. Even more proof that Target is way ahead of Walmart/Kmart/or any other of the marts in tricking us into thinking it's ok to shop there :)

Happy Friday

hi gang, crazily working out some last minute details re "the house"!!! Gmail and Blogger are both acting up and have been driving me nuts since last night!

Dinner with friends

So I had some of my girlfriends over for dinner last night - sort of like a last dinner at my apartment kind of thing :(

I didn't want to end up in the kitchen all night, so I chose something that I could prepare beforehand and didn't require a lot of attention and fuss.

I did however spend a couple of hours making fresh orrechiette in the morning. Want to make fresh pasta? It's super easy!




The sauce was made out of onions, carrots, carrots, Italian Sweet Sausage, beef, 1 can of whole tomatoes, fresh thyme, adding water little by little (about 1 can and a half worth) and seasoned with salt and pepper of course - all slow cooked for about 3 -4 hours. I love slow cooked sauce, it gets nice and thick and the flavor is deep and satisfying!





I was also able to get rid of a good amount of my giveaway clothes! Thanks girls!

Pet Peeve

OK. what's wrong with this picture??


Do ya think you could get a little closer to me lady?? I just had to take a picture of this - that's actually my friend Z in line for Pinkberry and this lady was practically breathing down our necks. So I stepped out and had to take a picture. You'd think she'd notice, but nope. Every time Z took a step, she was right behind her like a permanent shadow. I'm not sure if you can see it clearly, but Z's hair is actually on her arm and Z's bag is touching her stomach!

Last Night's Dinner #130: Dinner for One

Here's proof that dinner for one doesn't need to be boring or come from a frozen box!


I was walking around the Farmers Market looking for something to cook for dinner. You can't beat the endless crates of fresh vegetables, all gleaming with color screaming out "me" "me" "pick me!". So I did. I bought a super red NJ tomato, have you ever sniffed a tomato that actually smells like a tomato? Believe me, the tomatoes at my local Key Foods definitely doesn't smell like the ones at the Farmers Market. I also bought a couple of baby eggplants, one yellow zucchini and a sweet Italian pepper. I knew that I would simply slice these up and broil them - wish I had a grill!

Walking towards the end of the market I spotted the fish booth - Mmmmm scallops! So I bought 1/4 pound of scallops (4 to be exact) and I was excited to make dinner.

When I got home I was craving pasta so I thought ... grill the veggies in the broiler with olive oil, pan fry the scallops and make a simple tomato/onion sauce for the pasta.






Presto. Half an hour later...

I was one happy girl.

Happy Friday

Oh my goodness I have such a headache! I met up with my friend Jade last night who, by the way, is significantly younger than me and I was again reminded of that fact when I woke up this morning - too much wine for me!!! I've just taken 2 ibuprofens, 2 Pepcid ACs and 2 Tums.

I'll be heading out shortly to do some antique {window}shopping today with Z and hopefully I'll find some pieces for the new home!

Last Night's Dinner #129: Cottage Pie


Here's one of Hillsy's all-time favorite dish - typically it's made with lamb (Shepard's Pie), but since I don't eat Lamb we usually have this version. Last time we had this was when he tried making it - let's just say there was room for improvement so I promised I'd give it a shot the next time around...

This is a pretty simple dish to make, as long as you're fairly organized and do things in a certain order. It's also one of those dishes where you need to trust your own senses and season accordingly.

This recipe was based off of Tea and Sympathy's recipe but I didn't really follow the measurements to a T. Always go with your gut!

You'll need:
~4 potatoes peeled and coarsely cut into chunks
a big can of peeled whole tomatoes
about a cup of beef broth
1 pound of ground beef (the leaner the better)
1 tsp of Oregano
2 bay leaves
1 tbs of Worcestershire sauce or more depending on how you like it
one small onion finely chopped
one medium carrot finely chopped
one cup of peas (fresh or frozen)
about 1/2-1 cup of milk or cream
1/2 stick of unsalted butter
salt + pepper to taste

Prep:
1. Cut all the veggies as noted above.
2. Boil water for potatoes and add salt to the water.
3. Preheat oven to 350F.
4. Take out a square glass or ceramic baking thingy.
5. Gather the rest of the ingredients so it's all within arms reach.
6. Crush the tomatoes and set aside.
7. Transfer carrots and peas into a semi shallow pan and add a little bit of water so that it helps steam the veggies. Cook for about 10 minutes or until the carrots are tender. Drain and set aside.


Mash Potatoes (Topping)
Start by boiling the potatoes for the mash. Boil until fork tender. About 15 minutes. Drain. Then start mashing with a masher or with a fork. Add butter tablespoon at a time, and season with salt and pepper. Once you've added all of the butter, slowly pour in milk/cream. The amount you put depends on how you like your mash. I like mine sort of thick and fluffy. Make sure the seasoning is right. Set aside.


Filling:
Sauté onions (a couple of carrots made their way into the pan!) in olive oil, once translucent add meat and chop up so that there aren't any big chunks of meat. Season with salt. Brown the meat.

Add crushed tomatoes, beef broth, oregano and bay leaves. Mix and allow to boil then simmer for about one hour.


You want it to go from soupy to a nice thick meat sauce - sort of like hamburger helper (you're lucky if you don't know what that is).


Be careful to mix every now and then, so the bottom doesn't end up burning.

Once the sauce/filling is nice and thick, no longer soupy - add the carrots and peas. Mix. At this point, you want to remove the bay leaves and also test the flavors. Do you need more Worcestershire sauce? More salt? Pepper?


Assemble:
Transfer the meat filling into your glass/ceramic container and carefully transfer the mashed potatoes on top using the back of a spoon.


Cook for approximately 40-45 minutes. You might want to set the timer for 30 minutes and check it out to see how it's doing. You want the top to have a nice golden brown.

This is sooooo good.
