Eton Mess

Eton Mess

Although I'm sure she'd argue, my mother-in-law is a really great cook and like Hillsy, my father-in-law also has a few tricks up his sleeves when it comes to the kitchen - meringues being one of them. So when we had our little meringue mishap I immediately new who to run to! Unfortunately nothing can really save the botched batch but she suggested we make Eton Mess (gotta love that name) and that we did! YUM. So easy too! Just whip up some cream, add some crushed up bits of meringue, mix in some macerated berries (traditionally I guess it should be strawberries but we only had blackberries in the fridge) and top with more cream and more crunchy bits.

Wow! These look ridiculously yummy! I bet the little bits of chewy crunchy meringue in there make it taste divine!

And a way of toning down meringue if you're not a total fan!
