Give it a try: Kale Chips

I finally got around to making Kale Chips and I have to say, they're surprisingly addictive. Although I do have to mention that if you're the (ahem) gassy-type, I would limit your munching!

They're really easy to make. Just take a bunch of washed/dried kale, cut off white spine and cut leaves into smallish pieces. Divide into two large baking sheets, drizzle a tbs or so of extra virgin olive oil, sprinkle with a little bit of salt (maybe 1/2 tsp for each pan - you can always sprinkle more salt afterwards) and bake for 25 minutes in a preheated 365F oven or until the edges brown up and they crisp up. I've had to play around with the time and temp so depending on your oven, you may need to adjust. I like to check mine half way, toss them around a little bit and switch tray positions. I prefer cooling them off for at least 10 minutes before munching away.

They also keep pretty well in a ziplock bag, at least overnight that is (Hillsy usually inhales them, so they've never made it through longer than one night!) Let me know what you think, if you've never had them!

I recently tried these because we get a weekly CSA and we get lots of greens. I really, really like them! Almost tastes like salty air a bit :) But much better for you than potato chips. The worst is if you forget and they get burnt - yuck

This is an amazingly yummy (and addictive!) snack. I love how kale holds its crunchiness.

These are delish and my kiddos like them too. They actually featured them @ their school during a program (parent run) at lunch where encouraged to try a fruit or vegetable that they never had tasted. BTW, Whole Foods (or Whole PayCheck as my hubby calls it) is now selling small bags of Oragnic Kale Chips for $5.69 a bag!

kale is the one vegetable i have never liked, but i really want to because they are so healthy. this seems like a great way to start getting used to it!
