Pasta Salad

Here's a quick and easy dinner or lunch idea...

Boil up some pasta (maybe even an egg or two), chop up a bunch of veggies (red onions, red bell peppers, cucumber for crunch, I also had cooked potatoes from the night before), crack open a good can of tuna, add lemon juice, salt/pepper, olive oil, maybe a little balsamic vinegar or red wine vinegar, fresh parsley and mix it all up!!

I first combined all of the veggies + parsley and dressing (don't forget salt/pepper), then added the tuna and cooled pasta. Guess it's sorta like a Nicoise salad without the lettuce, anchovies and capers?
