Magic Meals
I love a recipe that takes no time to prep and basically cooks itself (kinda makes me feel guilty for ordering in sometimes). Prime example - Roasted Chicken with potatoes, red onions, lemon, thyme, balsamic and olive oil. You just chop up new potatoes, onions and lemons in quarters, throw in some sprigs of thyme, season well with salt & pepper, drizzle some olive oil and balsamic vinegar (make sure everything is nice coated) and voila, a satisfying meal in no time!
