Last Night's Dinner #110: Italian Sausage Special

This is an absolute MUST-TRY!


You'll need: Sweet Italian Sausages (I used 4 fairly big ones) cut in half, 4 Italian frying peppers (Cubanelle) cut into two-inch pieces, fennel bulb cut into two-inch pieces (reserve fawns) and 1 onion cut into two-inch pieces. Salt and olive oil


Drizzle about 1/4 cup olive oil + about a teaspoon of salt


Toss


Preheat broiler. Broil for about 8 to 10 minutes (about 4 inches away from flame) or until veggies are tender. Turn veggies and sausages and broil for another 10 minutes until sausages are cooked through. You should keep your eye on it - you can easily burn the vegetables.


Top with a handful of finely chopped fawns. Perfect with crusty bread drizzled with good olive oil.

That does look good! I really like using Italian sausages as they are so flavourful. I have also been enjoying fennel lately as well.

What are "fawns"?

R - hi there. Fawns are the "grassy" tops of the fennel bulbs (sort of looks like fresh dill). So just pluck some out and finely chop.

Thanks Marichelle! I tried the recipe tonight but realized too late that we actually don't have a broiler under our oven. Tried to use the oven but didn't achieve crispy sausages. I think I'll try this again but on a skillet and with another kind of sausage. (We don't have italian markets with fresh meats nearby.) :-(

The best part of the experience was using fennel, which I've never tried fresh before.

r. Oh NO! Do you have a conventional oven with a broiler option? I've actually seen pre-packaged italian sausages in the meat section of my local grocery store (sweet ones). Oh I wish I could send you some sausages to use :(
